â—¦ 3 medium carrots, peeled
â—¦ 3 medium parsnips, peeled
â—¦ 2 tablespoons extra virgin olive oil
â—¦ ½ teaspoon coarse salt
â—¦ ¼ teaspoon red pepper flakes
Recipe
Preheat the oven to 400° F with a rack in the middle position. Halve the carrots and parsnips crosswise. Slice lengthwise into ¼-inch-thick planks, then slice into ¼-inch-thick fries.
Put the carrots and parsnips on a rimmed baking sheet and toss with the oil, salt, and red pepper flakes.
Spread out into a single layer and roast, turning the veggies once, for about 20 minutes, until crisp and golden brown in places.
