Maple-Thyme Roasted Carrots

"I cook tons of carrots for my family. I always have a couple of bunches in the fridge, and they adapt to many different cooking techniques, making excellent sides for meats and poultry. Maple syrup and thyme accentuate their natural sweet flavor."
List of Ingredients
â—¦ 2 tablespoons extra virgin olive oil
â—¦ 2 tablespoons maple syrup
â—¦ Leaves from 3 thyme sprigs
â—¦ ½ teaspoon coarse salt
â—¦ 1 pound carrots, peeled and sliced on the bias
Recipe
Preheat the oven to 400° F with a rack in the upper third position.
Mix the olive oil, maple syrup, thyme, and salt together in a medium bowl. Add the carrots and toss to coat.
Spread the carrots on a small baking sheet or in an ovenproof skillet and roast for 20 minutes, until tender and golden on the edges. Serve warm.
