    Mom's Granola

    Recipe Introduction

    "My mom is known in her town for her granola. She sells it at her local farmers' market, The Wild Ramp, in Huntington, West Virginia. They sell out as soon as she brings it in and are always asking for more. I have told her she needs to raise her price! I like that it is lower in sugar and easy to make adjustments according to your tastes and what you have on hand. Use any combination of nuts you like."

    List of Ingredients

    â—¦ 3 ½ cups old-fashioned rolled oats
    â—¦ ½ cup unsalted sunflower seeds
    â—¦ ½ cup unsalted pumpkin seeds
    â—¦ 1 cup unsweetened flaked coconut
    â—¦ 1 ½ cups unsalted chopped nuts
    â—¦ ½ teaspoon salt
    â—¦ ½ cup extra-virgin olive oil
    â—¦ ½ cup pure maple syrup
    â—¦ ½ cup chopped dried fruit

    Recipe

    Preheat the oven to 250° F. Line two large baking sheets with parchment paper.

    In a large bowl, mix the oats, seeds, coconut, nuts, and salt. Add the olive oil and maple syrup. Stir until all ingredients are evenly coated. Divide the mixture onto the two prepared baking sheets and use the back of a wooden spoon to spread the mixture evenly in the pans. Bake for 35 to 40 minutes. Let cool to room temperature.

    Pick up the opposite edges of the parchment paper and transfer into a large bowl. Stir in the dried fruit. Transfer to airtight containers. Keeps up to 1 month.

    Makes about 7 ½ to 8 cups
