    Super Breakfast Mango Lassi

    Recipe Introduction

    "This smoothie reflects everything I love to eat. I eat mango almost every day, honey is my sweetener of choice, ginger is my secret health weapon, and Greek yogurt is my favorite protein source. Put it all together into one tropical lassi (just another word for smoothie) and I am a super-happy (and healthy) girl! Pineapple, berries, and stone fruits can all be used in place or in addition to the mango. Just keep the measurements the same and sub in a different fruit. FYI, a mango-peach lassi is insanely delicious...like, insanely. Use 2 cups of mango and 2 cups of sliced peaches. So good. I like this best super cold and right on the verge of being able to eat it with a spoon, but not quite thick enough to do so. If you want yours the same way, simply add a large handful of ice cubes. If you prefer a thinner lassi, add two handfuls of ice cubes (or more, until you get the consistency you like.) Then drink up!"

    List of Ingredients

    â—¦ 2 cups plain Greek yogurt
    â—¦ 4 cups very ripe fresh or frozen mango, thawed if frozen (from about 3 mangoes)
    â—¦ 1 ripe banana
    â—¦ 2 tablespoons honey, plus more for drizzling
    â—¦ 2 teaspoons grated fresh ginger
    â—¦ â…“ cup old-fashioned rolled oats
    â—¦ Juice of ½ lemon
    â—¦ 1 teaspoon pure vanilla extract
    â—¦ Large handfuls of ice cubes
    â—¦ 3 teaspoons chia seeds, plus more for topping
    â—¦ 1 to 2 teaspoons bee pollen
    â—¦ A few pinches of ground turmeric

    Recipe

    In a high-speed blender, combine the yogurt, mango, banana, honey, ginger, oats, lemon juice, vanilla, ice cubes, and 2 teaspoons of the chia seeds. Blend until completely smooth. Stir in the remaining 1 teaspoon of chia seeds.

    Pour the drink into glasses and top with a drizzle of honey and a sprinkling of chia seeds, bee pollen, and turmeric.

    Store any leftovers in the fridge for 4 to 5 days.
    Stir before drinking.

    Serves 2 to 4
