    Baked Sliced Apples

    Source of Recipe

    From "The Gourmet Cookbook"

    List of Ingredients

    • 4 large McIntosh apples
    • 2 Tbsp fresh lemon juice
    • ¼ cup packed light brown sugar
    • 3 Tbsp unsalted butter, cut into bits
    • 2 Tbsp light rum
    • 4 (3-inch) cinnamon sticks
    • Organic apple or mint leaves, for garnish (optional)
    • Calvados Whipped Cream (recipe follows)

    Instructions

    1. Put a rack in middle of oven and preheat oven to 450° F.
Peel and core apples. Cut each one crosswise into ¼-inch thick slices, keeping slices together, then reassemble slices to form whole apple. Brush with lemon juice. Put apples in a 9-inch glass pie plate and divide 2 tablespoons brown sugar, 2 tablespoons butter, and 1 tablespoon rum evenly among cavities. Sprinkle with remaining 2 tablespoons brown sugar, 1 tablespoon butter, and 1 tablespoon rum.

    2. Bake apples, basting frequently with pan juices, for 25 minutes. Reduce oven temperature to 350° F, insert cinnamon sticks into cavities, and bake, basting frequently, until apples are tender and well browned and juices are thick and syrupy, about 20 minutes more.

    3. Arrange apples on plates and spoon syrup over them. Garnish with apple or mint leaves, if desired, and serve with Calvados Whipped Cream.
