    Caramel Clementines

    List of Ingredients


    • 6 clementines or other tangerine variety
    • 1 (14-1/2-oz.) can apricot nectar (1-3/4 cups)
    • 1/2 cup sugar
    • 2 Tbsp Southern Comfort, orange liqueur, or orange juice
    • Pomegranate seeds, optional


    Instructions


    1. Peel clementines and remove any of the fibrous strands of pith on the fruit.

    2. Place the clementines, apricot nectar and sugar in a medium saucepan. Bring to boiling; reduce heat. Simmer, covered, for 5 minutes. Using a slotted spoon, remove fruit and place in individual serving bowls. Continue to gently boil apricot nectar mixture about 15 minutes, or until thick and syrupy. Remove from heat.

    3. Stir Southern Comfort into the syrupy mixture. Spoon over fruit. Sprinkle each serving with pomegranate seeds. Serve warm.

      Makes 6 servings.
