    Drunken Orange Slices

    List of Ingredients


    • 4 large sweet oranges
    • 1/4 cup cold water
    • 1/4 cup brown sugar
    • 3 Tbsp Cointreau (divided use)
    • 2 Tbsp whiskey
    • Juice of 1 small orange
    • 1 vanilla bean, split
    • 1 cinnamon stick
    • 4 cloves
    • 2 to 3 mace blades, optional
    • Ginger ice cream, to serve


    Instructions


    1. Using a small, sharp knife, cut off the base and top of the oranges. Now cut down the curve of the orange to remove all the peel and pith, leaving just the orange flesh. Cut the flesh horizontally into 1/4-inch slices and set aside.

    2. In a small pan, very gently heat the water, sugar, 2 tablespoons of the Cointreau, the whiskey, orange juice, vanilla bean, cinnamon stick, cloves and mace (if using) until the sugar has dissolved. Now turn up the heat and boil rapidly for 5 minutes. Cool slightly, but keep warm.

    3. Heat a grill pan over high heat, then quickly grill the orange slices for 1 minute on each side until caramelized. Top with the remaining Cointreau and set alight.

    4. Once the flames have died down, arrange the orange slices on serving dishes and drizzle with the syrup.

    5. Serve the orange slices immediately with the ginger ice cream or an ice cream of your choice.
