Preheat the oven to 300° F. Line a baking sheet with aluminum foil and coat with nonstick cooking spray.
In a heavy saucepan over high heat, combine the peanuts, sugar, and â…“ cup water and bring to a boil. Continue to cook, stirring often, until all of the liquid has evaporated and the mixture is pasty, 20 to 25 minutes.
Spread the peanuts in a single layer on the prepared baking sheet, breaking up clusters, and season generously with salt. Bake, stirring once, until deep brown, 30 to 35 minutes. Remove from the oven, season again with salt, and serve.
