Buffalo Burgers

Recipe Introduction
"Ground buffalo (bison) is very lean -- about 75% leaner than ground beef. With so little fat, the meat cooks very quickly. To keep the meat's juices from vaporizing, always grill buffalo over medium-low heat. I like to mix in a few seasonings for extra flavor. You can use whatever mix of spices you like, but try to keep the three basic elements: salt, pepper, and sugar. When these burgers are done the way you like them, pile on the condiments."

◦  2 pounds ground buffalo
◦  4 teaspoons salt
◦  4 teaspoons paprika
◦  2 teaspoons brown sugar
◦  2 teaspoons ground black pepper
Recipe
◦  Before You Go:
Using your hands, gently mix all ingredients in medium bowl. Shape into 8 patties, each about ½-inch thick. Put burgers between layers of wax paper and cover with wax paper. Store in airtight, crushproof container, and chill in refrigerator or cooler up to 2 days.
◦  When You Get There:
Remove burgers from cooler 20 minutes before grilling. Heat grill to medium-low and let rack get good and hot. Brush and oil rack, then grill burgers until slightly pink in center for medium-rare, 5 to 6 minutes per side (about 145° F on an instant-read thermometer) or until no longer pink in center for medium (about 160° F), 7 to 8 minutes per side.
◦  Neighborly Tips:
∙ More farmer's markets and butchers are selling buffalo meat. If you can't find any in your area, look on the Internet for a source near you.
∙ Serve these burgers with your favorite rolls, toasted on the grill. And, of course, piled high with condiments: ketchup, mayo, lettuce, tomato, onion, etc. If you've got other veggies, like mushrooms or peppers, in the cooler, toss them on the grill with the burgers, then slice 'em to use as a topping.
∙ Cook your opponent! Put these buffalo burgers on the grill when your NFL team is up against the Buffalo Bills or when your college team has a home game with the University of Colorado (their mascot is a buffalo).
