Caramelized Onion, Bacon, and Gruyère Dip

    Source of Recipe

From "Picnics, Potlucks, and Porch Parties" by Aimee Broussard

    List of Ingredients

    • 2 Tbsp olive oil
    • 3½ cups chopped onions
    • 1 tsp sugar
    • â…“ cup canola mayonnaise
    • â…“ cup light sour cream
    • 3 bacon slices, cooked and crumbled
    • 2 Tbsp chopped fresh chives, divided
    • ¼ tsp salt
    • ¼ tsp black pepper
    • 2 ounces Gruyère cheese, shredded, plus 2 tablespoons for sprinkling on top

    Instructions

    1. Swirl olive oil in medium pan; add onions. Cook on low for 20 minutes, sprinkle with sugar, and cook an additional 45 minutes to 1 hour. Stir occasionally so they don't burn.

    2. Preheat oven to 425°F.
In a medium bowl, combine mayonnaise, sour cream, bacon, 1 tablespoon chopped fresh chives, salt, and black pepper until well mixed. Stir in shredded Gruyère and caramelized onions.

    3. Place in one-quart baking dish, sprinkle 2 tablespoons additional Gruyère on top, and bake 20 minutes, or until bubbly. Sprinkle with remaining 1 tablespoon chives, and serve warm with crostini or crackers.

      Serves 8
