    Grilled Pound Cake and Bananas Foster

    Recipe Introduction

    "Dessert on the grill? Absolutely! And this one's so easy, you can make the whole thing at the tailgate. You could cut the cake and make the sauce at home. But the sauce gets reheated at the game anyway. Look for yellow bananas that are barely spotted brown. They should be firm yet ripe."

    List of Ingredients

    ◦  ½ cup (1 stick) butter
    ◦  1½ cups packed dark brown sugar
    ◦  ½ cup dark rum
    ◦  1 teaspoon cinnamon
    ◦  1 pound cake (16 ounces)
    ◦  4 firm ripe bananas
    ◦  1 can (7 ounces) whipped cream

    Recipe

    ◦  When You Get There:
    Heat grill to medium-high and let rack get good and hot. Melt butter, brown sugar, rum, and cinnamon in small pan over medium-low heat until slightly thickened, 10 to 15 minutes. Cut pound cake into 8 slices, each 1 to 2 inches thick. Peel bananas and cut each crosswise in half to make a total of 8 pieces.

    Brush pound cake slices and banana pieces with brown sugar mixture, saving about half of the sauce for serving.

    Brush and oil grill rack, then grill bananas and cake on rack until bananas are nicely grill-marked and cake is toasted, 2 to 4 minutes per side (bananas may take slightly longer, depending upon ripeness).

    Put cake on plates and top with bananas, cutting up bananas, if desired. Drizzle with extra sauce and squirt with whipped cream.

    ◦  Neighborly Tips:

    ∙ If your bananas are very ripe, leave the peels on and cut the whole bananas in half lengthwise. Brush the cut side with sauce, then grill in the skins, cut-side down, basting and turning as directed.

    ∙ Be sure to brush your grill rack until it's clean. Nothing kills a good dessert like burnt beef flavor.
