    Grilled Stuffed French Toast

    Recipe Introduction

    "Now, here's how to kick off a tailgating party in style -- with grilled breakfast! The whole thing is assembled the night before so all you have to do is put the soaked bread on the grill. Don't forget the maple syrup."

    List of Ingredients

    â—¦ 1 loaf Italian bread
    â—¦ 8 ounces cream cheese, at room temperature
    â—¦ 3 Tbsp confectioners' sugar, divided
    â—¦ ½ tsp almond extract
    â—¦ ½ cup seedless strawberry or raspberry preserves
    â—¦ 5 eggs
    â—¦ 1½ cups light cream or half-and-half
    â—¦ 1 tsp vanilla extract
    â—¦ Pinch of salt

    Recipe

    â—¦ Before You Go:
    The night before, cut off and discard ends of bread. Cut bread into about eight 1½-inch-thick slices. Cut slit through top crust of each slice to form deep pocket.

    Mix cream cheese, 2 tablespoons of sugar, and almond extract in medium bowl. Spread equally among pockets next to cream cheese. Lay stuffed bread in single layer in shallow 4-quart baking dish (such as 15-inch x 10-inch dish).

    In clean medium bowl, mix eggs, cream or half-and-half, vanilla extract, salt, and remaining 1 tablespoon sugar. Pour evenly over bread. Tilt pan and swirl eggs to completely coat bread. Cover and chill in refrigerator or top of cooler overnight.


    â—¦ When You Get There:
    Remove dish from cooler 20 minutes before grilling. Heat grill to medium and let rack get good and hot. Brush and oil rack; then grill French toast until nicely browned, about 5 minutes per side, flipping with spatula. Serve immediately.


    â—¦ Neighborly Tips:

    ∙ For a fancy glaze, mix together 2 tablespoons honey, 2 tablespoons grated orange zest, 3 tablespoons well-softened butter, and ¼ teaspoon cinnamon. Brush this glaze over the hot French toast before serving. Makes it look and taste delish!

    ∙ Try this recipe for dessert, too.

    ∙ Be sure to brush your grill rack until scrupulously clean. Otherwise, your French toast may taste like your last grilled meal.
