List of Ingredients
â—¦ 1 cup honey
â—¦ 1 cup loosely packed fresh basil leaves
â—¦ ¾ teaspoon lemon zest (from 1 lemon)
Recipe
Pour water to a depth of 1 inch into bottom of a double boiler over medium; bring to a boil. Reduce the heat to low, and simmer; place all the ingredients in top of double boiler over simmering water. (Make sure the top of the double boiler does not touch simmering water.)
Cook, stirring occasionally, until a candy thermometer registers 185° F, about 5 minutes. Cook, stirring occasionally, 10 more minutes, adjusting heat as necessary to maintain temperature.
Remove from heat, and cool 10 minutes. Pour through a fine wire-mesh strainer into a half-pint jar. Wipe jar rim; cover with metal lid, and screw on band. Store at room temperature up to 8 weeks.
