    Black Bing Cherry Preserves

    From "Camille Glenn's Old-Fashioned Christmas Cookbook"

    List of Ingredients


    • 5 cups Bing cherries, pitted
    • 2 cups sugar
    • ½ cup water
    • â…“ cup fresh lemon juice


    Instructions


    1. Combine the cherries and sugar in a heavy, shallow nonreactive pan. Set them aside to plump, several hours or as long as overnight.

    2. Add the water to the cherries and bring to a boil. Cook for 5 minutes. Then add the lemon juice and boil rather fast until the juice has thickened like jelly and a candy thermometer reads 221° F. Remove the pan from the heat and allow the preserves to sit overnight, covered; refrigerate them if you like.

    3. The next day, reheat the preserves to boiling and then spoon them into hot sterilized jars and seal. You can also store them in the refrigerator or (better) in the freezer.

      Makes 1½ pints
