Bourbon Peaches

List of Ingredients
• 1 vanilla bean, split
• ¾ cup granulated sugar
• Generous 3¾ cups water
• 6 to 8 ripe peaches, halved and pitted
• 1¼ cups Bourbon whisky
Recipe
Put the vanilla bean, sugar, and water into a large pan and heat gently until the sugar has dissolved. Turn up the heat and boil for 2 minutes, then set aside to cool.
Pierce each peach several times with a skewer. Pack into a sterilized jar.
Stir the Bourbon into the sugar syrup and pour over the peaches, making sure they are submerged entirely. Seal and let stand in a cool, dark place for two months before eating. These peaches keep indefinitely if unopened. Once opened, eat within one month.
