    Bourbon Peaches

    Source of Recipe

From "Handmade Gifts from the Kitchen" by Alison Walker

    Recipe Introduction

"Capture ripe peaches in a heady syrup for a serving of summertime, whatever the time of year. These peaches taste great served with ice cream and crêpes - why not enjoy a small glass of the peach-flavored liqueur alongside?"

    List of Ingredients

    • 1 vanilla bean, split
    • ¾ cup granulated sugar
    • Generous 3¾ cups water
    • 6 to 8 ripe peaches, halved and pitted
    • 1¼ cups Bourbon whisky

    Recipe

Put the vanilla bean, sugar, and water into a large pan and heat gently until the sugar has dissolved. Turn up the heat and boil for 2 minutes, then set aside to cool.

Pierce each peach several times with a skewer. Pack into a sterilized jar.

Stir the Bourbon into the sugar syrup and pour over the peaches, making sure they are submerged entirely. Seal and let stand in a cool, dark place for two months before eating. These peaches keep indefinitely if unopened. Once opened, eat within one month.

    Makes 4 pounds
