Recipe Introduction
"A salt with infused flavors can raise a humble dish to the realms of a princely one, whether added at the end of cooking or right at the beginning. The ones here are my favorites, but once you've made these, why not experiment with other flavors? It's important to use a good-quality sea salt for this recipe - standard table salt may be cheaper but it won't taste half as good."
List of Ingredients
For the Middle Eastern Salt:
◦  ½ cup sea salt
◦  1 tsp smoked paprika
â—¦ 1 tsp crushed red pepper flakes
◦  2 tsp cumin seeds, lightly roasted in a dry pan
For the Scandinavian Salt:
â—¦ ½ cup sea salt
â—¦ 1½ tsp dried dill
â—¦ 12 juniper berries, crushed and roughly chopped
For the Mediterranean Salt:
â—¦ ½ cup sea salt
â—¦ 1½ tsp dried oregano
â—¦ Finely grated zest of 2 lemons
Recipe
Put each set of ingredients into a separate bowl and stir together thoroughly.
Decant into jars, seal, label, and attach a wooden salt spoon to each.
