Frosted Vanilla Almonds

â—¦ 2 large egg whites, at room temperature
â—¦ â…” cup granulated sugar
â—¦ 1 tablespoon plus 1 teaspoon pure vanilla extract
â—¦ ½ teaspoon salt
â—¦ 3 cups raw almonds*
Recipe
Position a rack in the center of the oven and preheat oven to 300° F. Line a large rimmed baking sheet with parchment paper or a silicone baking mat.
In a large bowl, whisk together egg whites, sugar, vanilla extract and salt until well blended and foamy. Fold in almonds until coated. Pour onto prepared baking sheet and smooth into an even layer.
Bake for 10 minutes, then stir well (being sure to pat the almonds into an even layer), rotate baking sheet 180 degrees, and bake until crisp and just beginning to turn golden, about 20 minutes more. Transfer the almonds with the parchment or silicone mat to a wire rack to cool a bit. Serve warm, or let cool completely and store in an airtight container.
Makes about 3½ cups
* Be sure to use raw almonds. Nuts that are already roasted will burn during baking.
