    St. James Court Cherry Relish

    From "Camille Glenn's Old-Fashioned Christmas Cookbook"

    Recipe Introduction

    "Great with turkey, ham, or roast beef, this relish also makes a lovely Christmas gift."

    List of Ingredients

    • 4 pints fresh sour red cherries, stones removed
    • 3 cups cider vinegar
    • 8 cups sugar
    • Several pieces cinnamon stick (3½ inches each)

    Recipe

    Combine the cherries and vinegar in a mixing bowl, cover, and leave overnight in a cool spot or in the refrigerator.
    The next day, drain the cherries thoroughly and transfer them to a large bowl. Add the sugar and mix well. Cover and refrigerate for 10 days, stirring them once a day.

    Spoon the cherries into hot sterilized jars. Add a cinnamon stick to each jar and seal. Set aside for at least 1 month before serving.

    Makes 4 pints.
