    Mother's Day: Chocolate-Orange Mousse

    • -- Chocolate-Orange Mousse --
    • 8 ounces semisweet chocolate
    • 3 Tbsp butter, softened
    • 1/4 cup sugar
    • 1 Tbsp strong coffee
    • 2 Tbsp Grand Marnier or orange juice
    • 6 eggs, separated
    • 1/2 cup heavy cream
    • 2 Tbsp sugar
    • 1 tsp orange zest

    • -- Chocolate Sauce --
    • 4 squares semisweet chocolate
    • 1/4 cup butter
    • 1 Tbsp Grand Marnier
    • 1 Tbsp water or coffee


    Instructions


    1. For the chocolate-orange mousse: In a double boiler, melt the chocolate. Add the butter, stirring until it is melted and the mixture is smooth.

    2. Add the sugar and stir until dissolved. Remove from the heat and stir in the coffee and Grand Marnier (or orange juice). Allow to cool. Put the mixture into a mixing bowl and add the egg yolks. Stir well. Whip the cream until it is stiff, then add the sugar. Fold into the chocolate mixture. Beat the egg whites until stiff, and fold into the chocolate and cream mixture. Add the orange zest.

    3. Place into individual serving dishes (for extra flair, try serving it in crystal champagne flutes). Refrigerate until firm.

    4. For the chocolate sauce: Melt the chocolate in a double boiler over low heat, then add the butter and melt. Add the Grand Marnier and water (or coffee), and stir until smooth and shiny. Allow to cool.

      Top each serving of the mousse with a drizzling of chocolate sauce. Refrigerate until ready to serve.
