Christmas: Caramelized Onion and Potato Gratin

- ¼ cup butter
- 2 large yellow onions, sliced 1/8-inch thick
- 1 Tbsp balsamic vinegar
- 2 tsp salt, divided
- ¾ tsp ground black pepper, divided
- 1 cup heavy whipping cream
- 1 cup grated Gruyère cheese
- 1 cup grated Monterey jack cheese
- 3 pounds Yukon gold potatoes, peeled and thinly sliced
Instructions
- In a large skillet, melt butter over medium-low heat. Add onions; cover and cook for 30 minutes, stirring occasionally. Remove cover and raise heat to medium-high. Add vinegar, ½ teaspoon salt, and ¼ teaspoon pepper. Cook for 4 to 5 minutes, stirring constantly, until golden brown. Set aside.
- Preheat oven to 400° F.
In a medium bowl, combine cream, 1½ teaspoons salt, and ½ teaspoon pepper; whisk to combine well. In a separate bowl, combine cheeses.
- In a 2½-quart baking dish, layer half of potatoes, half of onion mixture, half of cheese, and half of cream mixture; repeat layers. Place on a baking sheet. Cover with nonstick aluminum foil. Bake for 1 hour and 30 minutes. Remove foil and continue baking for 15 minutes, or until potatoes are tender. Let stand for 15 minutes before serving.
Makes 10 to 12 servings.
