    Christmas: Cat's Praline Squares *

    • -- Crust --
    • 1½ cups all-purpose flour
    • ½ cup sifted confectioners' sugar
    • ½ tsp cinnamon
    • ¾ cup unsalted butter
    • 1½ cups chopped toasted pecans
    • .
    • -- Filling --
    • ¾ cup light corn syrup
    • ½ cup dark corn syrup
    • 1 cup packed brown sugar
    • ¼ cup unsalted butter
    • 4 eggs
    • 2 cups coarsely chopped pecans
    • 1 tsp vanilla extract


    Instructions


    1. Preheat oven to 325° F. Lightly grease a 13- x 9-inch baking pan.
      To prepare the crust, combine the flour, confectioners' sugar and cinnamon together in a large bowl. Cut in the butter until the pieces are the size of small peas. Stir in the toasted pecans. Press mixture into the prepared baking pan. Bake for 25 minutes, or until golden brown.

    2. Increase oven temperature to 350° F.
      In a medium, heavy-bottomed saucepan, combine the corn syrups, brown sugar and butter. Bring to a boil over medium heat, stirring constantly. Remove from heat and set aside to cool, about 10 minutes.

    3. Beat the eggs until mixed. Continue beating and slowly add eggs to the hot syrup mixture. Stir in the 2 cups pecans and the vanilla. Pour the filling onto the crust. Bake for 35 to 40 minutes, or until the center is set. Remove from the oven, and cool on a wire rack. Refrigerate when cooled. To serve, cut into squares and serve with whipped cream, if desired.

      Makes 24 squares.
