Christmas: Chocolate-Peppermint Sticks

- ½ cup butter
- 3½ (1-ounce) unsweetened chocolate squares, divided
- 1 cup sugar
- 2 large eggs, lightly beaten
- ½ cup all-purpose flour
- Dash of salt
- 1 tsp peppermint extract, divided
- 3 Tbsp butter, divided
- 1 cup sifted powdered sugar
- 1 Tbsp whipping cream or half-and-half
Instructions
- Combine ½ cup butter and 2 squares chocolate in a large saucepan; cook over low heat until butter and chocolate melt, stirring occasionally. Gradually add 1 cup sugar and next three ingredients, stirring until blended. Stir in ¼ teaspoon peppermint extract. Pour batter into a lightly greased 8-inch square pan. Bake at 350° for 24 minutes. Cool completely on a wire rack.
- Melt 2 tablespoons butter in a saucepan over low heat; stir in remaining ¾ teaspoon peppermint extract, powdered sugar and whipping cream. Spread over brownies. Chill 15 minutes.
- Combine remaining 1 tablespoon butter and remaining 1½ squares chocolate in a small saucepan; cook over low heat until butter and chocolate melt, stirring occasionally. Drizzle chocolate mixture evenly over powdered sugar mixture; spread into a smooth layer, if desired. Cover and chill at least 30 minutes before cutting into 2- x 1-inch bars.
Makes 32 bars.
