    Christmas: Chocolate Mint Cookies

    List of Ingredients


    • 2 cups (12 ounces) semisweet chocolate morsels
    • ¾ cup butter
    • 1½ cups firmly packed brown sugar
    • 2 Tbsp water
    • 2 large eggs
    • 2½ cups all-purpose flour
    • 1¼ tsp baking soda
    • ½ tsp salt
    • 2 (4.67-ounce) packages chocolate-covered mint wafer candies, cut into halves (such as Andes)


    Instructions


    1. Combine chocolate morsels and butter in a medium saucepan; cook over medium-low heat until chocolate and butter melt, stirring occasionally. Combine chocolate mixture, brown sugar and water in a large bowl; beat at low speed with an electric mixer until blended. Cool slightly. Add eggs, beating well.

    2. Combine flour, baking soda and salt; gradually add to chocolate mixture, beating well at low speed. Cover and chill one hour.

    3. Shape dough into 1-inch balls. Place 2 inches apart on greased baking sheets. Bake at 350° for 10 minutes. Place half of a mint on top of each warm cookie. Remove cookies to wire racks, and cool 1 minute. Gently spread melted mint over top of each cookie. Cool completely.

      Makes 8 dozen.
