    Christmas: Cranberry Bellinis

    List of Ingredients


    • 2 cups cranberries
    • 1/3 cup superfine sugar
    • 2/3 cup fresh orange juice
    • 1 bottle chilled Champagne or Prosecco


    Instructions


    1. Place the cranberries, sugar and juice in a small saucepan and bring to a boil. Cover and simmer over low heat for 5 minutes, or until soft. Press through a fine-mesh sieve and leave to cool. You should have about ¾ to 1 cup of thin purée. Cover and chill.

      Give the purée a stir, then spoon a rounded tablespoon into each of 6 glasses. Top with bubbly.

      Serves 6
