Christmas: Cranberry Bellinis

List of Ingredients
- 2 cups cranberries
- 1/3 cup superfine sugar
- 2/3 cup fresh orange juice
- 1 bottle chilled Champagne or Prosecco
Instructions
- Place the cranberries, sugar and juice in a small saucepan and bring to a boil. Cover and simmer over low heat for 5 minutes, or until soft. Press through a fine-mesh sieve and leave to cool. You should have about ¾ to 1 cup of thin purée. Cover and chill.
Give the purée a stir, then spoon a rounded tablespoon into each of 6 glasses. Top with bubbly.
