    Christmas: Eggnog Gooey Butter Cookies

    List of Ingredients


    • 1 package (8 ounces) cream cheese, room temperature
    • ½ cup butter, room temperature
    • 1 egg
    • 1½ tsp rum extract
    • ¼ tsp ground nutmeg
    • 1 package yellow cake mix
    • ½ cup powdered sugar and more for sprinkling


    Instructions


    1. Preheat oven to 350° F.

    2. In a large bowl with an electric mixer, beat the cream cheese and butter until smooth. Beat in the egg. Mix in the rum extract and nutmeg. Lastly, mix in the cake mix until thoroughly incorporated. Cover bowl and refrigerate for 2 hours.

    3. Roll the chilled batter into 1-inch-sized balls and then roll them in powdered sugar. Place on an ungreased cookie sheet, 2 inches apart. Bake 12 minutes. The cookies will remain soft and gooey. Cool completely and sprinkle with more powdered sugar (more is always better).
