Christmas: Frenched Green Beans with Hazelnut Butter

- 1½ pounds green beans
- 1/3 cup coarsely chopped hazelnuts
- 3 Tbsp unsalted butter
- ¼ to ½ tsp kosher salt
- Freshly ground black pepper
Instructions
- Bring a pan of lightly salted water to a boil. Trim beans and cut crosswise in half. Add to the boiling water and time 4 minutes. Test for tenderness and time for another minute, if necessary. Drain, rinsing with cold water to stop the cooking.
- French the beans by cutting in half lengthwise. Wrap in paper towels and again in a plastic bag. Refrigerate up to 24 hours.
- To serve, heat a large skillet over medium heat. Add chopped hazelnuts and toast until fragrant and golden. (The nuts can be toasted up to 2 days in advance.) Add butter, stirring until melted. Add beans, salt and pepper. Stir beans until heated through. Transfer to a warmed serving dish and serve.
