Christmas: Hot Buttered Rum

- ½ cup unsalted butter, softened
- 1-1/3 cups packed brown sugar
- 1 pint vanilla ice cream, softened
- 1 tsp ground nutmeg
- ½ tsp ground cinnamon
- ½ tsp ground cardamom
- ½ tsp vanilla extract

- -- Cocktail (per single serving) --
- 2 Tbsp frozen batter
- 1¼ ounces rum
- 1 pat butter
- Pinch of mace
Instructions
- For batter:
Combine butter, brown sugar, ice cream, nutmeg, cinnamon, cardamom, and vanilla extract with electric mixer to create a smooth batter.
- Pour mixture into a plastic container with a lid, and seal. Place in the freezer.
- For cocktail:
For each cocktail, place 2 tablespoons of the frozen batter in a mug and add ¾ cup of boiling water. Add rum and stir until batter is melted. Garnish with pat of butter and a pinch of mace.
Makes 6 servings.
