    Christmas: Peppermint Cheesecake

    • -- Crust --
    • 2 cups chocolate-wafer crumbs
    • 1/3 cup sugar
    • 6 Tbsp butter, melted
    • .
    • -- Filling --
    • 4 (8-ounce) packages cream cheese, softened
    • 1½ cups sugar
    • 6 large eggs
    • 4 (1-ounce) squares white chocolate, melted
    • 3 (8-ounce) containers sour cream
    • 1 tsp peppermint extract
    • .
    • Garnish: crushed candy canes


    Instructions


    1. Preheat oven to 350° F.
      Combine wafer crumbs, sugar, and butter in a medium bowl. Press firmly in bottom and 1 inch up sides of a 10-inch springform pan. Bake for 8 minutes. Remove from oven; set aside. Reduce heat to 300°.

    2. In a large bowl, beat cream cheese at medium speed with an electric mixer until creamy. Gradually add sugar, beating well. Add eggs, one at a time, beating well after each addition.

    3. Add melted chocolate, sour cream, and peppermint extract, beating at low speed until smooth. Pour into prepared pan. Bake for 1 hour and 30 minutes. Turn oven off. Leave in oven with door closed for 4 hours.

    4. Remove cheesecake from oven. Gently run a knife around edge of pan to release sides. Cool completely in pan on a wire rack. Cover and chill 8 hours.

    5. Remove sides of pan before serving.
      Garnish with crushed candy canes, if desired.

      Makes one 10-inch cheesecake.
