Christmas: Peppermint Cheesecake

- 2 cups chocolate-wafer crumbs
- 1/3 cup sugar
- 6 Tbsp butter, melted

- 4 (8-ounce) packages cream cheese, softened
- 1½ cups sugar
- 6 large eggs
- 4 (1-ounce) squares white chocolate, melted
- 3 (8-ounce) containers sour cream
- 1 tsp peppermint extract
- .
- Garnish: crushed candy canes
Instructions
- Preheat oven to 350° F.
Combine wafer crumbs, sugar, and butter in a medium bowl. Press firmly in bottom and 1 inch up sides of a 10-inch springform pan. Bake for 8 minutes. Remove from oven; set aside. Reduce heat to 300°.
- In a large bowl, beat cream cheese at medium speed with an electric mixer until creamy. Gradually add sugar, beating well. Add eggs, one at a time, beating well after each addition.
- Add melted chocolate, sour cream, and peppermint extract, beating at low speed until smooth. Pour into prepared pan. Bake for 1 hour and 30 minutes. Turn oven off. Leave in oven with door closed for 4 hours.
- Remove cheesecake from oven. Gently run a knife around edge of pan to release sides. Cool completely in pan on a wire rack. Cover and chill 8 hours.
- Remove sides of pan before serving.
Garnish with crushed candy canes, if desired.
Makes one 10-inch cheesecake.
