    Christmas: Peppermint Snowflake Mousse

    List of Ingredients


    • 3 Tbsp cold water
    • 1 (.25-ounce) envelope unflavored gelatin
    • 1¼ cups confectioners' sugar
    • 1 (8-ounce) package cream cheese, softened
    • 2 Tbsp Peppermint Schnapps
    • 2 cups heavy whipping cream
    • ½ cup peppermint-flavored baking chips, finely chopped *
    • ¼ cup crushed peppermint candy
    • Garnish: crushed peppermint, fresh mint leaves


    Instructions


    1. In a small bowl, combine water and gelatin; let stand for 2 minutes. Microwave on high for 30 seconds, or until gelatin is dissolved; set aside to cool.

    2. In a medium bowl, combine confectioners' sugar, cream cheese, butter, and peppermint schnapps. Beat at medium speed with an electric mixer until creamy; set aside. In a separate bowl, beat cream until soft peaks form. Beat in dissolved gelatin until stiff peaks form. Fold together cream cheese mixture, whipped cream mixture, peppermint flavored baking chips, and peppermint candy until well combined. Cover and refrigerate.

    3. To serve:
      Pipe mousse into peppermint swirl shot glasses or chocolate dessert shells. Garnish with crushed peppermint and fresh mint leaves, if desired.

      Makes about 5 cups.
