Father's Day: Perfect Prime Rib

- 1½ tsp kosher salt
- 1 tsp coarsely ground pepper
- 1 Tbsp extra-virgin olive oil
- 1 (6-pound) prime rib roast (about 3 ribs)
- Garnish: rosemary sprigs

- Fluffy Horseradish Sauce (recipe follows)
Instructions
- Combine salt, pepper and olive oil; rub evenly over roast. Place roast on a wire rack in an aluminum foil-lined roasting pan.
- Bake at 450° for 45 minutes; reduce oven temperature to 350° and bake 45 minutes, or until a meat thermometer inserted in thickest part registers 145° (medium-rare) or to desired degree of doneness.
- Remove from oven, cover loosely with aluminum foil, and let stand 20 minutes before slicing. Serve with Fluffy Horseradish Sauce. Garnish, if desired.
Makes 6 servings.
Fluffy Horseradish Sauce:
• 1 cup whipping cream
• 4 Tbsp prepared horseradish
• 1 to 2 Tbsp chopped fresh parsley
• ¼ tsp garlic salt
Beat 1 cup whipping cream at medium-high speed with a heavy-duty stand mixer 1 minute, or until stiff peaks form. Fold in remaining ingredients. Serve immediately, or cover and refrigerate up to 8 hours.
Makes about 2 cups.
