    Christmas: Prime Rib with Horseradish Cream

    List of Ingredients


    • One 6½- to 7-pound prime rib roast
    • 1 Tbsp olive oil
    • 2½ tsp kosher salt
    • ½ tsp ground black pepper
    • Horseradish Cream (recipe follows)


    Instructions


    1. Rub prime rib with olive oil, salt, and pepper. Cover and refrigerate for 4 hours or overnight.
      Remove from refrigerator and let come to room temperature.

    2. Preheat oven to 325° F.

    3. Place prime rib on a rack in a roasting pan. Cook for 2 hours and 45 minutes to 3 hours, or until a meat thermometer reaches an internal temperature of 145°, or desired doneness. Remove from oven, and let stand for 10 minutes before carving. Serve with Horseradish Cream.

      Makes about 12 servings.

      HORSERADISH CREAM

      • 1 cup heavy whipping cream
      • ¾ cup sour cream
      • 2 Tbsp prepared horseradish
      • 1 Tbsp chopped fresh chives
      • ¼ tsp salt
      • 1/8 tsp ground black pepper
      • Garnish: additional chopped fresh chives

      In a medium bowl, beat cream at medium speed with an electric mixer until thickened. Add remaining ingredients, beating to combine. Cover and chill for 1 hour before serving. Garnish with chopped fresh chives, if desired.

      Makes about 3 cups.
