    Christmas: Snowman Cookies

    List of Ingredients


    • 1 cup butter, softened
    • 1 (8-ounce) package cream cheese, softened
    • 2 cups granulated sugar
    • 1 egg
    • 1 tsp vanilla extract
    • ¼ tsp almond extract
    • 3½ cups all-purpose flour
    • 1 tsp baking powder
    • Semisweet chocolate mini morsels
    • Small candies, for buttons
    • Miniature peanut butter cups, unwrapped and halved
    • Canned or tubed frosting, for securing hat and creating a scarf on each snowman
    • Powdered sugar


    Instructions


    1. Beat butter and cream cheese at medium speed of electric mixer until fluffy. Gradually add sugar, beating well. Add egg, vanilla extract and almond extract; mix until blended. Combine flour and baking powder. Add to butter mixture; beat well. Cover and refrigerate 8 hours.

    2. Preheat oven to 350° F.
      Shape dough into 48 1-inch balls, 48 ¾-inch balls, and 48 ½-inch balls. On ungreased cookie sheets, place one ball of each size in a row to form a snowman. Press together gently. Repeat with remaining balls. Press two mini-morsels into lower part of head for eyes (need room on top of head to secure hat after baking). Press round candies into body for buttons. Repeat on all snowmen.

    3. Bake at 350° for 16 to 18 minutes, or until the edges are firm and the bottoms are golden. Remove from oven; cool on baking sheets. When cooled, apply tube frosting to the top of each head to secure the ½ peanut butter cup (top down) to the head, creating a hat. Using one of the tips for the tube frosting, create a scarf for each snowman. Lightly sprinkle powdered sugar on all completed snowman to represent snow.

      Makes 4 dozen.
