    Christmas: Spiced Cheesecake

    List of Ingredients


    • -- Crust --
    • 2 cups chocolate wafer crumbs
    • ¼ cup sugar
    • ½ cup butter, melted
    • .
    • -- Filling --
    • 4 (8-ounce) packages cream cheese, softened
    • 1 cup sugar
    • 2 Tbsp all-purpose flour
    • ¼ tsp ground nutmeg
    • ¼ tsp ground cinnamon
    • 2 large eggs
    • 1 cup prepared eggnog
    • 2 Tbsp dark rum


    Instructions


    1. Preheat oven to 300° F.

    2. To prepare crust:
      In a medium bowl, combine wafer crumbs and sugar. Add melted butter, stirring until combined. Press mixture into bottom and 1 inch up sides of a 9-inch springform pan.

    3. To prepare filling:
      In a large bowl, beat cream cheese, sugar, flour, nutmeg, and cinnamon at medium speed with a mixer until creamy. Add eggs, one at a time, beating well after each addition. Add eggnog and rum, beating until combined. Pour batter into prepared crust. Bake for 1 hour and 10 minutes. Turn oven off, and leave cheesecake in oven with door closed for 1 hour. Remove from oven, and chill for at least 8 hours before serving.

      Makes one (9-inch) cheesecake.
