Christmas: Spiced Pear and Cranberry Relish

"Pears are among our most delicious and versatile winter fruits. This relish will add zest and sparkle to many holiday menus - turkey, chicken, ham, game, or savory pies."
List of Ingredients
◦ 2 cups cranberries
◦ 1 cup water
◦ 1 cup sugar
◦ 1 small piece fresh or dried ginger root
◦ 1 or 2 firm Kiefer, Anjou, or Bosc pears (barely beginning to ripen)
◦ Juice of 1 lemon, or to taste
Recipe
Pick over the cranberries, discarding any soft ones. Set them aside.
Combine the water, sugar, and ginger root in a large saucepan and bring to a boil. Reduce to a simmer and cook for about 5 minutes.
Peel and core the pears, cut them into eighths, and add them to the saucepan. Cook for 3 to 5 minutes, until the pears are barely tender.
Add the cranberries and cook until they have popped and cooked into a sauce, 10 to 15 minutes. Remove from the heat. Discard the ginger root and stir in the lemon juice. Allow the relish to cool.
Cover and refrigerate. The relish will keep for several days.
