Christmas: Traditional Fruitcake

- Nonstick cooking spray
- All-purpose flour
- 1 cup shortening
- 1 cup granulated sugar
- 5 large eggs
- 4 Tbsp pure vanilla extract
- 3 cups all-purpose flour
- 3 tsp baking powder
- 1 tsp kosher salt
- 1½ cups whole red candied cherries
- 1½ cups whole green candied cherries
- 3 cups diced candied pineapple
- 10 ounces golden raisins
- 1 pound walnut halves
Instructions
- Preheat the oven to 300° F and lightly spray and flour a 10-inch tube pan. In a large bowl, use an electric mixer to cream together the shortening and sugar until it becomes light and fluffy. Beat in the eggs and vanilla.
- In another large bowl, combine the flour, baking powder, and salt. Add this to the wet mixture and stir until well combined, then stir in the fruit and nuts to coat.
- Bake the fruitcake for about 2 hours until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before removing it and placing it on a wire rack to cool completely. Once cool, wrap the cake tightly and store it in a cool place.
