    Christmas: Traditional Fruitcake

    List of Ingredients


    • Nonstick cooking spray
    • All-purpose flour
    • 1 cup shortening
    • 1 cup granulated sugar
    • 5 large eggs
    • 4 Tbsp pure vanilla extract
    • 3 cups all-purpose flour
    • 3 tsp baking powder
    • 1 tsp kosher salt
    • 1½ cups whole red candied cherries
    • 1½ cups whole green candied cherries
    • 3 cups diced candied pineapple
    • 10 ounces golden raisins
    • 1 pound walnut halves


    Instructions


    1. Preheat the oven to 300° F and lightly spray and flour a 10-inch tube pan. In a large bowl, use an electric mixer to cream together the shortening and sugar until it becomes light and fluffy. Beat in the eggs and vanilla.

    2. In another large bowl, combine the flour, baking powder, and salt. Add this to the wet mixture and stir until well combined, then stir in the fruit and nuts to coat.

    3. Bake the fruitcake for about 2 hours until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before removing it and placing it on a wire rack to cool completely. Once cool, wrap the cake tightly and store it in a cool place.

      Serves 16
