Christmas: White Chocolate-Cherry Fudge

- 2-1/2 cups powdered sugar
- 3/4 cup half-and-half
- 1/4 cup unsalted butter, cut into 4 pieces
- 12 ounces white chocolate, coarsely chopped
- 1-1/4 cups dried cherries, coarsely chopped
- 1/2 tsp pure vanilla extract
Instructions
- Lightly spray an 8-inch square pan with cooking spray and line the bottom with a square of parchment paper. Set aside.
- In a 2-quart saucepan over medium heat, whisk together powdered sugar and half-and-half until smooth. Add butter and bring to a boil over medium-high heat, stirring constantly. Once the mixture reaches a boil, stop stirring and set timer for 5 minutes.
- Reduce heat to low and stir in chocolate, whisking until smooth. Stir in dried cherries and vanilla. Pour mixture into the prepared pan. Cool, then chill at least 2 hours.
Loosen fudge from sides of pan. Invert onto a cutting board, lift off pan, and peel off parchment. Cut into 1-inch squares. Wrap in foil and store in an airtight container in the refrigerator up to 1 week.
Makes 3 dozen squares.
