    Cinco de Mayo: Blackberry Margaritas

    Source of Recipe

From "The Pioneer Woman Cooks: A Year of Holidays"

    List of Ingredients

    • Margaritas:
    • 2 cups tequila
    • 1/2 cup triple sec
    • Juice of 2 limes
    • 1/4 cup sugar
    • .
    • Blackberry Purée:
    • 4 cups fresh blackberries
    • 1/2 cup sugar
    • Juice of 1 lime
    • .
    • Lime Sugar:
    • 1 cup sugar
    • Zest of 3 limes
    • 1 lime wedge

    Instructions

    1. Place the tequila and triple sec in the freezer until they're very cold. (Because of the alcohol content, they will not freeze.)

    2. To make the blackberry purée:
Add the blackberries to a medium saucepan, along with the sugar and the lime juice. Bring to a gentle boil over medium heat, stirring constantly. Then reduce the heat and let them cook for 20 to 25 minutes, until thick. Place a fine-mesh strainer over a bowl and strain the berries, processing to work as much liquid through as possible. All that should be left behind are seeds and pulp. Cover the bowl with plastic wrap and refrigerate until the purée is completely cooled.

    3. When it's margarita time, make the lime sugar:
Place the sugar and lime zest on a plate and mix to combine.

    4. Rub a lime wedge around the rims of the margarita glasses, then dip the rims into the lime sugar until they're totally coated.

    5. To make the margaritas:
Fill a blender to the top with ice. Add the tequila, the triple sec, about half of the blackberry purée, the lime juice, and the sugar. Blend until it's completely smooth. If you'd like a deeper purple color, blend in a little more of the blackberry purée. Fill the glasses, then get this party started!

      Makes 8 to 12 margaritas.
