    Cinco de Mayo: La Mansion's Chicken Fajitas

    List of Ingredients


    • 1/2 cup fresh lime juice
    • 1 Tbsp each: chopped garlic and black pepper
    • 6 Tbsp olive oil
    • 4 Tbsp chopped fresh cilantro
    • Salt and pepper to taste
    • 2 lbs. boneless, skinless chicken breasts
    • .
    • -- For Serving --
    • Flour tortillas
    • Toppings: Shredded lettuce, tomato, salsa, pico de gallo, guacamole and/or sour cream


    Instructions


    1. Combine lime juice, garlic, pepper, oil, cilantro and salt and pepper. Marinate chicken, covered in refrigerator, one hour or as long as overnight.

    2. Grill on barbecue grill (over mesquite, if desired), until done. Cut into bite-size strips.

    3. Place chicken strips on warm flour tortillas and add desired toppings -- shredded lettuce, tomato, salsa, pico de gallo, guacamole and/or sour cream.

      Makes 4 to 6 servings.
