Cinco de Mayo: Spicy Queso Dip

- 1 small onion, diced
- 1 Tbsp oil
- 1 clove garlic, minced
- 1 (16-ounce) package pepper Jack pasteurized prepared cheese product, cubed
- 1 (10-ounce) can diced tomatoes and green chiles
- 2 Tbsp chopped fresh cilantro

- Tortilla chips
Instructions
- Cook onion in hot oil in a large nonstick skillet over medium-high heat 8 minutes, or until tender. Add garlic, and cook 1 minute. Remove from heat.
- Combine cheese, tomatoes, and onion mixture in a large microwave-safe glass bowl. Microwave at High 5 minutes, stirring every 2½ minutes. Stir in cilantro. Serve with tortilla chips.
Makes about 3 cups.
