    Cinco de Mayo: Watermelon Pico de Gallo

    List of Ingredients


    • 1 small seedless watermelon
    • 1/2 red onion, finely diced
    • 1 red bell pepper, seeded and finely diced
    • 1 green bell pepper, seeded and finely diced
    • 1 yellow bell pepper, seeded and finely diced
    • 2 jalapeños, seeded and finely diced
    • 1 bunch cilantro, chopped
    • Juice of 2 limes
    • 1/2 tsp salt, more to taste


    Instructions


    1. To dice the watermelon, lop off the top and bottom, then slice large pieces of rind off the sides. Keep going until all the rind is off.

    2. Cut half the watermelon into slices, then wrap and save the other half for another use. Stack a couple of the slices, then dice them up. Repeat with the rest of the slices, then throw it all in a large bowl.

    3. Add the onion, bell peppers, and jalapeños. Throw in the cilantro, the lime juice, and salt. Toss the pico de gallo around gently and give it all a taste. Add more of any ingredients you think it needs. Serve it both as a munchie before the meal and as a garnish for the food. You'll love this!

      Makes 8 to 12 servings.
