    Easter: Day-After Easter Egg Salad

    List of Ingredients


    • 1/4 cup light mayonnaise
    • 1 Tbsp chopped fresh dill
    • 1 Tbsp grated onion
    • 1 Tbsp dill pickle relish
    • 1 Tbsp prepared yellow mustard
    • 1/4 tsp pepper
    • 1/8 tsp salt
    • 8 hard-boiled eggs, peeled and coarsely chopped


    Instructions


    1. Stir together first 7 ingredients in a large bowl; gently stir in eggs. Cover and chill at least 2 hours or up to 2 days. Serve on lettuce bed or toasted sandwich bread.

      Makes 5 servings.
