Easter: Roasted Red Potatoes

List of Ingredients
- 4 pounds red potatoes
- 3 Tbsp olive oil
- 1 Tbsp minced garlic
- 1¼ tsp salt
- ½ tsp ground black pepper
- 2 Tbsp butter, melted
- 2 Tbsp chopped fresh parsley
- 2 Tbsp chopped fresh chives
Instructions
- Preheat oven to 400° F. Line a large shallow roasting pan with nonstick aluminum foil.
- In a large bowl, combine potatoes, olive oil, garlic, salt, and pepper. Arrange potatoes in a single layer in prepared pan.
- Bake for 40 to 45 minutes, or until potatoes are tender, stirring occasionally. Toss potatoes with melted butter, parsley, and chives.
Makes 8 servings.
