    Easter: Roasted Red Potatoes

    Phyllis Hoffman Celebrate (Spring 2011)

    List of Ingredients


    • 4 pounds red potatoes
    • 3 Tbsp olive oil
    • 1 Tbsp minced garlic
    • 1¼ tsp salt
    • ½ tsp ground black pepper
    • 2 Tbsp butter, melted
    • 2 Tbsp chopped fresh parsley
    • 2 Tbsp chopped fresh chives


    Instructions


    1. Preheat oven to 400° F. Line a large shallow roasting pan with nonstick aluminum foil.

    2. In a large bowl, combine potatoes, olive oil, garlic, salt, and pepper. Arrange potatoes in a single layer in prepared pan.

    3. Bake for 40 to 45 minutes, or until potatoes are tender, stirring occasionally. Toss potatoes with melted butter, parsley, and chives.

      Makes 8 servings.
