Easter: Southern Ham Salad

List of Ingredients
- 4 cups ground cooked ham *
- 1 cup mayonnaise
- 1 cup finely chopped celery
- ½ cup sweet pickle relish
- 3 Tbsp minced green onion
- 1 Tbsp Dijon mustard
- ½ tsp ground black pepper
Instructions
- In a medium bowl, combine ham, mayonnaise, celery, sweet pickle relish, green onion, Dijon mustard, and pepper, stirring well. Cover and refrigerate.
Makes about 4½ cups.

RABBIT SAMMIES
Little hands love an opportunity to play with food, and rabbit-shaped mini sandwiches are an ideal way to let them do just that. Here's how: Use a bunny-shaped cookie cutter to cut out bread, and then spread with Southern Ham Salad. Top with another bread cutout. Use a squeeze bottle of mayonnaise to "mark" a place for the nose. Place chives in mayonnaise to make whiskers. Add a bit more mayonnaise, and top with a carrot nose (small triangle). Add more mayonnaise and carrot pieces for eyes, and enjoy!
Final Comments
* For ground cooked ham, simply use a food processor.
