    Halloween: Scarily Good Pumpkin Spice Bars

    • 1/4 cup catsup
    • 2 eggs
    • 1/2 cup oil
    • 1 cup granulated sugar
    • 1 cup minus 2 Tbsp canned pumpkin (about 1/2 of a 15-ounce can); not pumpkin pie mix
    • 1 cup flour
    • 1 tsp baking soda
    • 1/2 tsp baking powder
    • 1/4 tsp salt
    • 1 tsp cinnamon
    • 1/4 tsp ground ginger
    • 1/4 tsp ground cloves
    • 1/4 tsp ground allspice
    • 1 cup semisweet chocolate chips

    • -- Frosting --
    • 4 ounces cream cheese (1/2 of an 8-ounce package), softened
    • 1/4 cup (1/2 stick) butter, softened
    • 1 cup plus 2 Tbsp powdered sugar
    • 1/2 tsp vanilla


    Instructions


    1. Preheat the oven to 350° F. Grease and flour a 9- x 13-inch pan. In the large bowl of an electric mixer, combine the catsup, eggs, oil, granulated sugar and pumpkin. Sift together the flour, baking soda, baking powder, salt, cinnamon, ginger, cloves and allspice. With the mixer at low speed, gradually add the dry ingredients to the pumpkin mixture. Blend well, scraping the bowl. Stir in the chocolate chips and pour into the prepared pan. (It will not be a deep layer.)

    2. Bake about 20 minutes (but check early), until a toothpick inserted in the center comes out clean. Cool completely on a wire rack.

    3. For frosting:
      In the small bowl of an electric mixer, beat together the cream cheese and butter until smooth. Sift the powdered sugar and add a little at a time, beating and scraping the bowl, until smooth. Beat in the vanilla, then frost the cooled cake.

      Makes about 32 bars.
