    Thanksgiving: Maple Sweet Potatoes

    List of Ingredients


    • 2 medium sweet potatoes, peeled and diced
    • 1 Tbsp butter
    • 3 thin slices ginger, minced fine
    • 2 Tbsp cream
    • 1/4 cup maple syrup
    • 1 Tbsp brown sugar
    • Salt and pepper to taste


    Instructions


    1. Boil the peeled and diced sweet potatoes until they are tender, 20 to 25 minutes. Drain and set aside.

    2. Heat a saucepan over medium heat. Add the butter and ginger; saute slowly for one minute.

    3. Add the syrup, brown sugar, and cream; cook slowly for 2 minutes, stirring. This mixture should caramelize and thicken a bit.

    4. Add the sweet potatoes and mix; mash with a fork, leaving a few small lumps for texture.

    5. If the mixture is too thick, a little milk or cream may be added. Add salt and pepper to taste; garnish with a generous drizzle of maple syrup.

      Serves 4
