Memorial Day: Blue Burger

List of Ingredients
- 8 slices double-smoked bacon, each ¼-inch thick
- 1½ pounds ground chuck (80% lean)
- Kosher salt and freshly ground black pepper
- 1½ Tbsp canola oil
- 2 ounces blue cheese, crumbled (about ½ cup)
- Chopped fresh flat-leaf parsley (for garnish; optional)
- 4 hamburger buns, split; toasted, if desired
Instructions
- Cook the bacon in a large sauté pan over medium heat until golden brown and slightly crisp, 3 to 4 minutes per side. Remove the bacon to a plate lined with paper towels.
- Divide the meat into 4 equal portions. Form each portion loosely into a ¾-inch-thick burger and make a deep depression in the center with your thumb. Season both sides of each burger with salt and pepper.
- Cook the burgers, using the oil and topping each one with some cheese, and a basting cover (or metal bowl) during the last minute of cooking. Place the burgers on the bun bottoms and top each with two slices of bacon and chopped parsley, if using. Cover with the bun tops and serve immediately.
