Memorial Day: Old-Fashioned Slaw

List of Ingredients
- 1 head green cabbage, firmly shredded
- 2 cups matchstick carrots
- 2 cups finely sliced red bell pepper
- 1 cup finely sliced Vidalia onion
- 2 jalapeño peppers, seeded and finely diced
- 1 (8-ounce) jar dill relish
- 1 cup mayonnaise
- 3 Tbsp apple cider vinegar
- 2 Tbsp sugar
- 2 tsp kosher salt
- 1 tsp freshly ground black pepper
Instructions
- In a large bowl, combine cabbage, carrots, bell pepper, onion, jalapeños, and dill relish; set aside. In a small bowl, whisk together mayonnaise, vinegar, sugar, salt and pepper. Pour mayonnaise mixture over cabbage mixture, tossing to coat well. Cover, and refrigerate for at least 8 hours.
Makes 8 servings.
