    Mother's Day: Fresh Peach Bellinis

    From "Barefoot Contessa at Home"

    List of Ingredients


    • 2 ripe peaches, unpeeled, pitted, and diced
    • 1 Tbsp freshly squeezed lemon juice
    • 1 tsp sugar
    • 1 bottle (750 ml) chilled Prosecco sparkling wine


    Instructions


    1. Place the peaches, lemon juice, and sugar in the bowl of a food processor fitted with a steel blade and process until smooth. Press the mixture through a sieve and discard the peach solids in the sieve.

    2. Place 2 tablespoons of the peach purée in each of six champagne glasses and fill with cold Prosecco. Serve immediately.

      Makes 6 drinks.
