Mother's Day: Fresh Peach Bellinis

List of Ingredients
- 2 ripe peaches, unpeeled, pitted, and diced
- 1 Tbsp freshly squeezed lemon juice
- 1 tsp sugar
- 1 bottle (750 ml) chilled Prosecco sparkling wine
Instructions
- Place the peaches, lemon juice, and sugar in the bowl of a food processor fitted with a steel blade and process until smooth. Press the mixture through a sieve and discard the peach solids in the sieve.
- Place 2 tablespoons of the peach purée in each of six champagne glasses and fill with cold Prosecco. Serve immediately.
Makes 6 drinks.
