New Year's: Black-Eyed Peas

- 1 piece fat back or salt pork (3 ounces)
- 1 cup chopped onion
- 2 cups chicken broth
- 1 pound dried black-eyed peas, rinsed
- 3 to 4 cups water
- Salt and pepper

- Crumbled corn bread
- Chopped scallions
Instructions
- Sauté pork in a large saucepan over medium heat until it starts to brown and the fat begins to melt, about 5 minutes. Add onion; cook about 8 minutes, then deglaze with broth, scraping brown bits from the bottom of the pan.
- Add peas, and 3 cups water to cover. Bring to a boil, reduce heat to a simmer, and cook until tender, about 45 minutes, adding more water if the peas get dry. Once peas are tender, remove pork; season peas with salt and pepper.
Garnish with corn bread and scallions.
Makes 6 cups.
