New Year's: Caviar Spread

List of Ingredients
- 3 hard-cooked eggs
- 3/4 cup light mayonnaise
- 3 small green onions, thinly sliced
- 1 (6-ounce) jar marinated artichoke hearts, drained and coarsely chopped
- 1 (2-ounce) jar black caviar, chilled
Instructions
- Finely chop the hard-cooked eggs and place in the bottom of a small serving dish. Spread with half of the mayonnaise.
- Sprinkle the green onions and marinated artichoke hearts over the top; spread with the remaining mayonnaise. Cover and chill.
- Just before serving, sprinkle the caviar over the top. Serve with crackers or Melba toast.
Makes 8 appetizer servings.
