    New Year's: Caviar Spread

    List of Ingredients


    • 3 hard-cooked eggs
    • 3/4 cup light mayonnaise
    • 3 small green onions, thinly sliced
    • 1 (6-ounce) jar marinated artichoke hearts, drained and coarsely chopped
    • 1 (2-ounce) jar black caviar, chilled


    Instructions


    1. Finely chop the hard-cooked eggs and place in the bottom of a small serving dish. Spread with half of the mayonnaise.

    2. Sprinkle the green onions and marinated artichoke hearts over the top; spread with the remaining mayonnaise. Cover and chill.

    3. Just before serving, sprinkle the caviar over the top. Serve with crackers or Melba toast.

      Makes 8 appetizer servings.
